Is one of the traditional products of the region Marche, the most cultivated variety in winter is called for the vocation of the cultivation zone, "Ascolana." Always furnished fresh, after having been husked per hand and washed, our endive is very tender and very clear, ideal for salads.
The cultivation foresees the natural whitening, got thanks to the manual binding of the heads done some days before the harvest.
