The spinach is mainly cultivated in the region Marche, precisely in the zone of the Valdaso where the product has good characteristics. Picked up when still of small dimensions, tender and with little developed leaf stems . Husked by hand and carefully washed. It has spread particularly in Europe only in the last centuries and especially in the centre of Italy, today it is one of the most cultivated vegetables. The spinaches are quite rich of iron, and they have an elevated content in folic acid, an useful substance for various functions of the organism.
